amaranth used to be something i never touched in the supermarket shelves, i barely even noticed it was there. these days though, i’ve been using this grain a lot, especially since it comes with various different health benefits. i introduced it a while ago in my amaranth & bean burger recipe but believe me, amaranth is just great stuff!
yes, the struggle is real.. sweet potatoes definitely got me hooked! whether i add them in soups, make oil-free fries in the oven, have them in a bowl with roasted veggies or simply enjoy half of it with mashed avocado! so easy to prepare, so cheap, so nutritious and so tasty. must try if you haven’t already!

in order to be able to stick to a healthy diet and avoid eating crap when those sugar cravings kick in, i usually always keep a batch of bliss balls in my freezer. they’re super easy to make, don’t require too many ingredients and are a great alternative to regular sweets and even chocolate – yep, i’m serious, even chocolate!
today i discovered that these amaranth & bean burger patties i made recently also taste great with salad! just throw in a bit of spinach or other greens such as kale, iceberg oder regular lettuce, top it with the burger patties and have some slices of avocado to it. so satisfying and so good!
